Introduction: This beef and bean chili is a hearty and satisfying dish that’s perfect for cozy nights. Packed with ground beef, a variety of beans, and seasoned with a rich blend of spices, this chili will warm you up and leave you craving more. Great for family dinners or as a game day snack!

Ingredients:

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups beef broth (or water)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika (optional)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions:

  1. Cook the Ground Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.
  2. Sauté the Vegetables: Add the chopped onion, garlic, and bell pepper to the pot. Cook for 5-7 minutes until softened.
  3. Add the Seasonings: Stir in the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1-2 minutes to toast the spices.
  4. Add the Beans and Tomatoes: Pour in the beef broth, kidney beans, black beans, white beans, diced tomatoes, and tomato paste. Stir to combine.
  5. Simmer: Bring the chili to a simmer, then reduce the heat to low. Let it cook for 30-45 minutes, stirring occasionally, until the flavors meld and the chili thickens.
  6. Serve: Ladle the chili into bowls and serve hot. You can top it with shredded cheese, sour cream, or chopped green onions if desired.

Note: This chili is even better the next day, so feel free to make it ahead of time. You can also freeze leftovers for a quick meal later. Enjoy!
