Recipe: Hearty Beef and Bean Chili

Ingredients:
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups beef broth (or water)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika (optional)
- 1 teaspoon dried oregano
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions:
- Cook the Ground Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.
- Sauté the Vegetables: Add the chopped onion, garlic, and bell pepper to the pot. Cook for 5-7 minutes until softened.
- Add the Seasonings: Stir in the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1-2 minutes to toast the spices.
