Instructions
- Preheat the oven to 375°F. Line a baking sheet with parchment paper and lightly grease it.
- Toss the diced apples with lemon juice and set aside.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the eggs, milk, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the diced apples.
- Drop heaping spoonfuls of batter onto the prepared baking sheet, leaving about 2 inches between each fritter.
- Bake for 18–22 minutes, until puffed and lightly golden.
- For a deeper golden exterior, brush the fritters lightly with melted butter and bake for another 2–3 minutes.
- Whisk together the powdered sugar, milk, melted butter, cinnamon, and vanilla until smooth.
- Drizzle the glaze generously over the warm fritters.
- Let the glaze set for a few minutes before serving.
